Amaranthus retroflexus

Description:
In the beginning of the season corn growers use Amaranth as a cover crop providing edible greens and moisture retention for the new crops. Later in the year when the Amaranth goes to seed birds from all around will come to eat the amaranth seeds, bringing with them seeds from other places, and helping to keep local insect populations in balance.
